Foodie: Summer Wraps

Ok Paleo lovers you are going to find this dressing as a new addiction. Me and hubby LOVE it! We have manipulated it a little bit to more fit the Paleo lifestyle. By simply adding less or more coconut or almond milk you can also change the consistency so you can use it for more things than just wraps. My favorite being to not add as much (almond or coconut milk) and dip apples or other fruit in it. I am telling you, your whole family will want this. I had requests to make it almost every day for a week. No joke my friends, no joke.

 Ingredients
 1/2 cup chopped cooked chicken breast
 3 tablespoons chopped Fuji apple
2 tablespoons chopped black or red grapes (I did craisins, we didn't have any grapes..still delish!)
 2 tablespoons Jif Extra Crunchy Peanut Butter (Paleo-use almond butter)
 1 tablespoon lite mayonnaise (I used coconut milk or almond milk)
 2 teaspoons honey
Iceberg lettuce

Preparation
 Chop chicken meat and fruit, mix in bowl. Mix in peanut butter, mayonnaise and honey. Spoon into open lettuce leaf, roll and serve.

Serves Serves 1
