Greek Yogurt Banana Waffles

Happy Monday! How was your weekend? Filled with freezing cold weather, snow blizzards, and crazy road conditions?? Me and the hubs just stayed inside working on the house, enjoying the snow through the windows, glad we didn't have to be outside in it. It was actually a very successful weekend in making progress on the house...thanks to those of our friends that came and helped us out. Slowly, SLOWLY, getting closer to painting.
So during our move I discovered that we owned a waffle maker. Pathetic I know that I was oblivious to this fact, but I have to blame it on our ridiculously deep cupboards that seemed to have no end. I am guessing we had received it as a wedding gift and it got tucked back in with all the other small appliances. Funny thing being that I wanted to get a waffle maker for Christmas this year, I was overly joyed when I found it through the move. There are SO many awesome yummy things you can make in waffle makers these days beside your regular waffle. Although, this recipe I am going to share with you today isn't one of those super crazy recipes I still am very fond of it and still wanted to share. I feel like they are more healthy than the traditional waffle because it substitutes greek yogurt for all the buttermilk. I don't know about you but I am always up for cutting calories in my recipes when it doesn't sacrifice the yummy flavor!

Makes 5 Waffles
Ingredients:

DRY Ingredients
1 1/2 cups white/whole wheat flour
1/3 cup old fashioned oats
1/8 tsp. ground cinnamon
1/2 tsp. salt
3 tsp. baking powder
2 T sugar

WET Ingredients
1 cup milk (I used 1%)
7 oz. greek yogurt (I would recommend Chobani Vanilla or Plain)
2 large eggs
1 medium ripe banana mashed
3 T butter

Directions:
Add all dry ingredients together in medium sized bowl, mix well. Now add all of your wet ingredients to your dry mixture and stir until well blended. That's all my friends...easiest recipe ever right? For each waffle use about 3/4 cup of batter or however much your waffle maker instructions usually calls for. 
Top with cut bananas, powder sugar and a drizzle of maple syrup!
